Pumpkin Baked Oats
This single serve, vegan, and gluten-free pumpkin baked oats recipe is so easy to whip up requiring pantry staples. It has a cake like consistency and is the best way to start the day!

- ½ cup oat flour blended oats
- ½ banana mashed
- ¼ cup almond milk non-dairy milk of choice
- 2 tablespoon pumpkin puree
- 1 tablespoon date syrup or sweetener of choice
- 1 tablespoon chia seeds
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ½ teaspoon baking powder
- Optional: 1 tablespoon protein powder
- Optional: chocolate chips on top
Preheat the oven to 350F.
Mash your ½ banana and mix with the rest of the ingredients!
Pour into a ramekin then top with chocolate chips
Bake for 20-25 minutes then enjoy!
Can be stored for up to 5 days in the fridge!
