This single serve, vegan, and gluten-free pumpkin baked oats recipe is so easy to whip up requiring pantry staples. It has a cake like consistency and is the best way to start the day!

Ingredients
  

  • ½ cup oat flour blended oats
  • ½ banana mashed
  • ¼ cup almond milk non-dairy milk of choice
  • 2 tablespoon pumpkin puree
  • 1 tablespoon date syrup or sweetener of choice
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • Optional: 1 tablespoon protein powder
  • Optional: chocolate chips on top

Instructions
 

  • Preheat the oven to 350F.
  • Mash your ½ banana and mix with the rest of the ingredients!
  • Pour into a ramekin then top with chocolate chips
  • Bake for 20-25 minutes then enjoy!
  • Can be stored for up to 5 days in the fridge!
