Lentil Soup

This vegan lentil soup comes together in under 30-minutes in 1 pot and is packed with fiber and plant-based protein!

Ingredients
  

  • 1 yellow onion diced
  • 2 tablespoon olive oil
  • 2 carrots chopped
  • 1 ½ teaspoon cumin
  • 1 cup dried lentils
  • 4 cups vegetable broth
  • salt + pepper to taste
  • 1 lemon juiced
  • fresh cilantro or parsley to top

Instructions
 

  • Chop your onion then add it to a pot with the oil and cumin. Cook for 5 minutes then add your lentils, carrots, salt, pepper and stir.
  • Add in your vegetable broth and bring to a boil then cover the pot and reduce heat to a simmer until the lentils are cooked about 15-20 minutes
  • Turn the heat off, add your lemon juice and use an immersion blender (or pour into a standing blender) until smooth. Garnish with fresh herbs, and serve with bread!
