Lentil Soup
This vegan lentil soup comes together in under 30-minutes in 1 pot and is packed with fiber and plant-based protein!

- 1 yellow onion diced
- 2 tablespoon olive oil
- 2 carrots chopped
- 1 ½ teaspoon cumin
- 1 cup dried lentils
- 4 cups vegetable broth
- salt + pepper to taste
- 1 lemon juiced
- fresh cilantro or parsley to top
Chop your onion then add it to a pot with the oil and cumin. Cook for 5 minutes then add your lentils, carrots, salt, pepper and stir.
Add in your vegetable broth and bring to a boil then cover the pot and reduce heat to a simmer until the lentils are cooked about 15-20 minutes
Turn the heat off, add your lemon juice and use an immersion blender (or pour into a standing blender) until smooth. Garnish with fresh herbs, and serve with bread!
