Carrot Ginger Lentil Soup

This carrot ginger lentil soup is packed with vitamins A and C as well as potassium. It comes together in just 30-minutes!

Ingredients
  

  • 1 yellow onion chopped
  • 4 cups chopped carrots 12 ish carrots
  • 1 ½ tablespoons peeled and minced ginger
  • 2 tablespoon avocado oil
  • 4 cups vegetable broth
  • 1 cup of lentils
  • 1 teaspoon garlic powder
  • 1 pinch cinnamon
  • 1 teaspoon salt
  • ½ cup coconut milk
  • Optional cilantro top

Instructions
 

  • Cut your onion and carrots and mince your ginger.
  • In a pot, add onions with oil and sauté for 5 minutes. Add your carrots, lentils, vegetable broth, ginger, garlic powder, cinnamon and salt and bring to a boil. Simmer for 15-20 min (carrots should be tender)
  • Add your coconut milk then blend your soup (immersion blender or in a blender)
  • Enjoy!
