Carrot Ginger Lentil Soup
This carrot ginger lentil soup is packed with vitamins A and C as well as potassium. It comes together in just 30-minutes!

- 1 yellow onion chopped
- 4 cups chopped carrots 12 ish carrots
- 1 ½ tablespoons peeled and minced ginger
- 2 tablespoon avocado oil
- 4 cups vegetable broth
- 1 cup of lentils
- 1 teaspoon garlic powder
- 1 pinch cinnamon
- 1 teaspoon salt
- ½ cup coconut milk
- Optional cilantro top
Cut your onion and carrots and mince your ginger.
In a pot, add onions with oil and sauté for 5 minutes. Add your carrots, lentils, vegetable broth, ginger, garlic powder, cinnamon and salt and bring to a boil. Simmer for 15-20 min (carrots should be tender)
Add your coconut milk then blend your soup (immersion blender or in a blender)
