Kale Apple Kidney Bean Salad
This kale apple kidney bean salad is packed with nutrients and plant-based protein. It has walnuts and raisins as well to add texture!

- kale
- 1 large pink lady/honeycrisp apple
- ⅓ cup golden raisins
- ⅓ cup hemp seeds
- ⅓ cup raw walnuts toasted
- 1 15 oz can kidney beans
Dressing
- Juice of 1 medium/large lemon
- 2 tablespoon olive oil
- 1 teaspoon maple syrup
- 1 ½ teaspoon mustard
- salt + pepper to taste
In a pan with a bit of avocado oil toast your walnuts for 5 minutes
Combine all of your dressing ingredients together in a container and set aside.
Massage your shredded kale with a tiny bit of salt then add the rest of your toppings and mix your salad and enjoy!
