Sweet and Smokey Tofu Sandwich
This sweet and smokey tofu sandwich has shredded tofu, an herby avocado base, pickled onions, lettuce, and is topped with jam.

Tofu
- 1 block firm tofu
- 1 tablespoon cornstarch
- 1 ½ teaspoon garlic powder
- 2 ½ teaspoon smoked paprika
- 1 teaspoon coriander
- 2 tablespoon tamari
- 1 tablespoon avocado oil
- salt/pepper
Avocado Mash
- 1 avocado
- ¼ cup parsley minced
- 3 tablespoon chives minced
- 3 tablespoon dill minced
- 1 garlic clove
- zest and juice ½ lime
The Fixin's
- bagels or english muffins
- romaine lettuce
- pickled onions
- strawberry jam
Preheat oven to 425F
Shred your tofu then top with your spices. Toss the tofu with your hands until it's coated and spread into an even layer on your tray. Bake the tofu for 15 minutes, toss, then put in for another 10 minutes.
Mash your avocado with fresh herbs, garlic, and lime
Assemble your sandwich with toasted bread of choice, avocado mash, pickled onions, shredded tofu, lettuce, jam and then wrap in parchment paper
Feel free to wrap in foil if you want to meal prep and store this in the fridge for 4-5 days!
