Hidden Veggie Pasta with Vegan Sausage

This hidden veggie pasta with vegan sausage uses 7 roasted vegetables to blend into a creamy sauce to coat the pasta and sausage.

Ingredients
  

  • 4 tomatoes
  • 2 carrots
  • 2-3 celery ribs
  • 1 red bell pepper
  • 1-2 zucchini
  • 1 yellow onion
  • 1 head of garlic
  • 2 tablespoon olive oil
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoon dried thyme
  • 2 teaspoon dried oregano
  • 2 teaspoon red pepper flakes
  • ⅓-1/2 cup non-dairy milk or pasta water. I used almond milk
  • Optional: parsley to top

Instructions
 

  • Preheat oven to 400F and roughly chop all veggies and put them on a parchment lined baking sheet. Put some avocado oil and salt/pepper/oregano/thyme on the veggies
  • Stick them in the oven for 45 minutes then add the veggies to the blender and squeeze out the garlic cloves from the skin. Add your red pepper flakes and almond milk/pasta water.
  • Blend! It took me about 3-5 minutes of blending to get this mixture super creamy.
  • Cook your plant based sausage of choice.
  • Add to your cooked pasta to the sauce, top with your sausage, parsley, and enjoy! I topped mine with parsley, sea salt flakes, and red pepper flakes.
