- 2 slices of bread I used a garlic infused sourdough
- ¼-⅓ cucumber
- 2 leafs of kale
- ½ avocado
- dash of fresh lemon juice
- drizzle of olive oil
- pinch of sea salt flakes
Vegan Spinach Pesto
- 2 cups packed fresh basil large stems removed
- 2 cups packed spinach trust me you can’t even taste it!
- 3 tablespoon walnuts can sub for pine nuts or sunflower seeds
- 3 large cloves garlic
- 2-3 tablespoon lemon juice I used ¾ of a large lemon because I like it really zesty!
- 3-4 tablespoon nutritional yeast
- sea salt to taste
- 1 tablespoon olive oil I try not to include much oil in my recipes so you can always sub for more water
- ⅓ - ⅔ cups water add more if you want it to be a bit runnier, I added roughly ⅔ cups
Tahini Sauce
- ¼ cup tahini
- 1 tablespoon maple syrup
- 1 lemon juiced
- 1-2 tablespoon water to thin
