In a pot over medium high heat, add your water and oil then boil. Turn off heat then add your flour, salt, and sugar and mix until combined. Mix with a wooden spoon or rubber spatula until it forms into an elastic ball.
Let it cool for 5-10 minutes.
Take a plastic bag cutting a hole on one corner or use a piping tool and transfer your churro mixture inside.
Pipe your churros to be a few inches long in your air fryer (or pipe on a plate then transfer to your air fryer)
Spray some avocado oil on top of the churros then put them in the air fryer for 10-12 minutes at 400F (depending on the size of your piping tool) I did 10 minutes for ¾ inch churro width. Depending on the size of your churros you may need to air fry for an additional minute or two to get them to be golden brown.
While they’re air frying, heat your coconut milk/cream chocolate until fully melted and combined.
Serve your churros with a dusting of sugar if you’d like, or dip into the rich chocolate and enjoy!
