- 1 large sweet potato
- avocado oil spray or avocado oil
Toppings for Avocado Boat
- ½ avocado
- Squeeze of lemon juice
- Dash of red peppers
- Salt pepper
Toppings for Almond Butter Apple Boat
- ⅓ apple
- 1-2 tablespoon almond butter
- 1-2 tablespoon pumpkin seeds
- 1-2 teaspoon golden raisins
- Dash of cinnamon
Toppings for Cucumber Yogurt Boat
- 1-2 tablespoon non-dairy greek yogurt
- 5-7 thin slices of cucumber
- 1-2 teaspoon fresh dill chopped
Preheat your oven to 400F.
Wash your sweet potato and cut into ¼-1/3 inch strips (this is tricky so be careful!)
Place your slices on a baking sheet and spray with a bit of avocado oil
Put them in the oven for 30 minutes. Meanwhile, prep your toppings
Depending on how thick your slices are, your potatoes should be done after 30 minutes. They should be cooked through and slightly toasted.
Allow them to cool for a few minutes then put whatever toppings you'd like on your potato boats!
