Sweet Potato Brownies
These sweet potato brownies come together in 30-minutes and are perfectly fudge-y, chocolatey, and delicious!

- 1 cup mashed sweet potato 1 sweet potato
- 1 ripe banana mashed
- ¼ cup maple syrup
- ⅓ cup peanut butter
- ½ cup cacao powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ¾ teaspoon salt
Preheat your oven to 350F and grease a bread loaf pan
Wash your sweet potato then dry and stick with a fork 3-4 times. Microwave your sweet potato (5-7 minutes or so) until soft. Peel the skin off then mash the sweet potato in a large bowl.
Add your banana to your sweet potato bowl and mash. Add the remaining wet ingredients then mix your dry ingredients and stir until smooth.
Transfer your batter to your greased bread pan then bake for 13-17 minutes.
Icing: To make your icing, melt your chocolate and coconut oil and mix until smooth and combined.
Let your cake cool completely before icing then top with sea salt flakes and enjoy!
