Sweet Potato Brownies

These sweet potato brownies come together in 30-minutes and are perfectly fudge-y, chocolatey, and delicious!

Ingredients
  

  • 1 cup mashed sweet potato 1 sweet potato
  • 1 ripe banana mashed
  • ¼ cup maple syrup
  • cup peanut butter
  • ½ cup cacao powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • ¾ teaspoon salt

Instructions
 

  • Preheat your oven to 350F and grease a bread loaf pan
  • Wash your sweet potato then dry and stick with a fork 3-4 times. Microwave your sweet potato (5-7 minutes or so) until soft. Peel the skin off then mash the sweet potato in a large bowl.
  • Add your banana to your sweet potato bowl and mash. Add the remaining wet ingredients then mix your dry ingredients and stir until smooth.
  • Transfer your batter to your greased bread pan then bake for 13-17 minutes.
  • Icing: To make your icing, melt your chocolate and coconut oil and mix until smooth and combined.
  • Let your cake cool completely before icing then top with sea salt flakes and enjoy!
