Chia Banana Oat Bites

Ingredients
  

  • 2 medium very ripe bananas
  • 1 cup oat flour or other gluten free flour
  • ¾ cup rolled oats
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 pinch sea salt
  • 2 tablespoon flaxseed
  • 3 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 2 tablespoon almond butter can use sunbutter if nut free
  • 2 tablespoon maple syrup
  • 1 ½ tablespoon extra virgin olive oil
  • ½ cup chocolate chips

Instructions
 

  • In a large bowl, mash the banana then stir the rest of the ingredients except for the chocolate chips. Stir until combined then fold in the chocolate chips.
  • Cover the mixture and refrigerate for 20 minutes while preheating the oven to 375F (190 C).
  • Use a tablespoon or equivalent to scoop the mixture into small cookies on a baking sheet.
  • Bake for 10-11 minutes, you don’t want them too brown to ensure they stay moist.
  • They store for a few days on the counter and 5 days in the fridge.
