Chia Banana Oat Bites

- 2 medium very ripe bananas
- 1 cup oat flour or other gluten free flour
- ¾ cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 pinch sea salt
- 2 tablespoon flaxseed
- 3 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 2 tablespoon almond butter can use sunbutter if nut free
- 2 tablespoon maple syrup
- 1 ½ tablespoon extra virgin olive oil
- ½ cup chocolate chips
In a large bowl, mash the banana then stir the rest of the ingredients except for the chocolate chips. Stir until combined then fold in the chocolate chips.
Cover the mixture and refrigerate for 20 minutes while preheating the oven to 375F (190 C).
Use a tablespoon or equivalent to scoop the mixture into small cookies on a baking sheet.
Bake for 10-11 minutes, you don’t want them too brown to ensure they stay moist.
They store for a few days on the counter and 5 days in the fridge.
