Chickpea Cookie Dough
This chickpea cookie dough is packed with plant-based protein and is perfectly smooth and creamy, resembling cookie dough.

- 1 15 oz can of chickpeas rinsed
- ¼ cup cashew butter I used cashew butter but feel free to use your favorite or even seed butter, just note it may have more of the taste of that nut/seed
- 3 tablespoon maple syrup
- 3 tablespoon oat flour
- 1 ¾ teaspoon vanilla extract
- ½ teaspoon salt
- ¼-1/3 cup chocolate chips
Thoroughly rinse and drain your canned chickpeas then add them to a high speed blender or food processor along with your nut butter, vanilla, maple syrup, salt, and oat flour.
Blend until combined then transfer to a bowl and mix in your chocolate chips.

This can be stored in the fridge for up to one week- it's unlikely they'll last that long though ;)
