Snickies! (Date Snickers Treat)
Snickies are a healthy date snickers treat that have layers of dates, a cookie dough almond butter mixture, peanuts, and chocolate.
Prep Time 10 minutes mins
Freezing Time 45 minutes mins
Total Time 55 minutes mins
- 10 pitted dates halved
- ½ cup almond butter runny
- 1 ½ tablespoon oat flour
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
- ¼ cup peanuts slightly chopped
- 3 tablespoon chocolate chips
- 1 ½ teaspoon coconut oil
- Sea salt flakes to top
De pit your dates and tear them in ½. Place them on a plate lined with parchment or wax paper.
Make the “cookie dough” by combining your runny almond butter, oat flour, maple syrup, vanilla, salt, and slightly chopped peanuts in a bowl.
Put some cookie dough mixture on top of each date half then put them in the freezer for 5-10 minutes to set.
In a small bowl, put your chocolate chips and coconut oil and microwave for 30-60 seconds until melted.
Take your dates out of the freezer. Then, top your dates with the cookie dough mixture with melted chocolate and stick them back in the freezer for 20-40 minutes to harden.
Sprinkle with sea salt and enjoy!
Storage: I love to eat these both from the fridge and freezer. They keep for up to 7 days in the fridge and 4 weeks in the freezer in an airtight container.
