Course Dessert
Servings 20 snickes

Ingredients

  • 10 pitted dates halved
  • ½ cup almond butter runny
  • 1 ½ tablespoon oat flour
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • ¼ cup peanuts slightly chopped
  • 3 tablespoon chocolate chips
  • 1 ½ teaspoon coconut oil
  • Sea salt flakes to top

Instructions

  • De pit your dates and tear them in ½. Place them on a plate lined with parchment or wax paper.
  • Make the “cookie dough” by combining your runny almond butter, oat flour, maple syrup, vanilla, salt, and slightly chopped peanuts in a bowl.
  • Put some cookie dough mixture on top of each date half then put them in the freezer for 5-10 minutes to set.
  • In a small bowl, put your chocolate chips and coconut oil and microwave for 30-60 seconds until melted.
  • Take your dates out of the freezer. Then, top your dates with the cookie dough mixture with melted chocolate and stick them back in the freezer for 20-40 minutes to harden.
  • Sprinkle with sea salt and enjoy!
  • Storage: I love to eat these both from the fridge and freezer. They keep for up to 7 days in the fridge and 4 weeks in the freezer in an airtight container.
