Gooey Brownie Pie Cups
These Vegan Gooey Brownie Pie Cups are a healthier dessert alternative, refined sugar free, featuring the rich taste of cocoa, the crunch of pecans, a hint of sea salt, and a creamy coconut yogurt center.

- 1 ½ cups almond flour
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon apple cider vinegar
- ⅓ cup agave/ honey
- 1 teaspoon vanilla extract
- ⅓ cup oil I used olive oil
- Nuts of choice to top I used pecans + salt
- 1 cup water
Frosting/Gooey Center
- ⅓ cup non-dairy yogurt
- ¼ cup cocoa powder
- 2 tablespoons maple syrup
Preheat the oven to 180C/350F. Spray muffin tray with avocado oil/line with baking cups
In a large mixing bowl, add your dry ingredients then add the wet ingredients and mix until a smooth batter remains.
Transfer to the muffin tray and bake for 15-17 minutes, they will still be a bit gooey on the inside.
Meanwhile, make the frosting by combining the non-dairy yogurt, cocoa powder, and maple syrup for sweetness.
Once the “gooey pies” have been out of the oven for 3-5 minutes, put the frosting mixture inside and spread. Top with pecans and salt. Best enjoyed while warm for maximum gooey-ness
Store in the fridge for 5-8 days!
