Sneaky 7 Veggie Pasta

Sauté and blend tomatoes, carrots, celery, bell pepper, garlic, zucchini, and onion to create a creamy, rich pasta sauce that's loaded with nutrients and flavor.

Ingredients
  

  • 4 tomatoes vine
  • 2 carrots
  • 2-3 celery ribs
  • 1 red bell pepper
  • 1-2 zucchini
  • 1 yellow onion
  • 1 head of garlic
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 1-2 teaspoon dried thyme
  • ⅓-1/2 cup almond milk or pasta water
  • cilantro or parsley to top
  • Pasta of choice to serve 4 I used chickpea pasta

Instructions
 

  • Preheat oven to 400F and roughly chop all veggies and put them on a parchment lined baking sheet. Put some avocado oil and salt/pepper on the veggies
  • Stick them in the oven for 45 minutes then add the veggies to the blender and squeeze out the garlic cloves from the skin. Add your thyme and almond milk/pasta water.
  • Blend! It took me about 3-5 minutes of blending to get this mixture super creamy.
  • Add to your cooked pasta and enjoy! I topped mine with cilantro and red pepper flakes
