Sneaky 7 Veggie Pasta
Sauté and blend tomatoes, carrots, celery, bell pepper, garlic, zucchini, and onion to create a creamy, rich pasta sauce that's loaded with nutrients and flavor.

- 4 tomatoes vine
- 2 carrots
- 2-3 celery ribs
- 1 red bell pepper
- 1-2 zucchini
- 1 yellow onion
- 1 head of garlic
- 2 teaspoon salt
- 1 teaspoon pepper
- 1-2 teaspoon dried thyme
- ⅓-1/2 cup almond milk or pasta water
- cilantro or parsley to top
- Pasta of choice to serve 4 I used chickpea pasta
Preheat oven to 400F and roughly chop all veggies and put them on a parchment lined baking sheet. Put some avocado oil and salt/pepper on the veggies
Stick them in the oven for 45 minutes then add the veggies to the blender and squeeze out the garlic cloves from the skin. Add your thyme and almond milk/pasta water.
Blend! It took me about 3-5 minutes of blending to get this mixture super creamy.
Add to your cooked pasta and enjoy! I topped mine with cilantro and red pepper flakes
