Lemon Dill Potato Salad
Boil a variety of potatoes until tender, then toss with a zesty dressing of lemon juice, olive oil, mustard, and fresh dill. Chill to marry the flavors for a refreshing and nutritious side dish.

- 2 cups chopped potatoes
- 1 ½ tablespoon olive oil
- juice from ½ lemon
- 1 teaspoon smooth mustard
- 1 tablespoon fresh dill finely chopped
- 1 clove garlic minced
- ¼ teaspoon salt
- black pepper
Wash and cut your potatoes then add them to boiling water for 8-10 minutes until tender
Mix the rest of the ingredients together to create a sauce
Drain your potatoes and toss with the sauce. Add fresh black pepper on top
