Lemon Dill Potato Salad

Boil a variety of potatoes until tender, then toss with a zesty dressing of lemon juice, olive oil, mustard, and fresh dill. Chill to marry the flavors for a refreshing and nutritious side dish.

Ingredients
  

  • 2 cups chopped potatoes
  • 1 ½ tablespoon olive oil
  • juice from ½ lemon
  • 1 teaspoon smooth mustard
  • 1 tablespoon fresh dill finely chopped
  • 1 clove garlic minced
  • ¼ teaspoon salt
  • black pepper

Instructions
 

  • Wash and cut your potatoes then add them to boiling water for 8-10 minutes until tender
  • Mix the rest of the ingredients together to create a sauce
  • Drain your potatoes and toss with the sauce. Add fresh black pepper on top
  • Can eat them warm or chilled! Enjoy!
