White Bean Kale Avocado Salad
Toss massaged kale with white beans, sliced avocado, hemp seeds, and sunflower seeds. Drizzle with a homemade lemon dressing for a quick, nutritious salad.

- 1 bunch of kale
- 1- 1 ½ avocado
- 1 15- oz can white beans
- ⅓ cup sunflower seeds
- ⅓ cup hemp hearts
- ⅓ cup pumpkin seeds
Lemon Dressing
- ⅓ cup olive oil
- 1 ½-2 lemons juiced
- 1 ½ tablespoon maple syrup
- 1 ½ teaspoon dijon mustard
- 2 cloves of garlic
- salt and pepper to taste
Start by rinsing your kale and chopping into small pieces removing the stem. Then add them to a large bowl with a pinch of salt and massage with your hands
Mix the dressing ingredients together
Add the rest of your ingredients to your salad bowl with kale then top with your homemade dressing
