Silken Tofu Spinach Pasta Sauce

Blend silken tofu with spinach, nutritional yeast, and cashews for a creamy, nutrient-rich pasta sauce. Serve over your choice of pasta for a balanced and satisfying meal.

Ingredients
  

  • 6 oz bag of spinach
  • 9 oz silken tofu
  • 1 tablespoon nutritional yeast
  • -¼ cup cashews
  • cup hemp seeds
  • 2 garlic cloves
  • salt + pepper
  • pasta of choice 3-4 servings worth
  • ½ cup pasta water

Instructions
 

  • Boil water and prepare your pasta (make sure to save about ½ cup of pasta water for later).
  • Cook down your spinach in a sautee pan for 3-4 minutes then add to a blender with the rest of the ingredients.
  • Blend until smooth, takes a few minutes, adding 1 tablespoon of pasta water at a time. Once fully smooth, pour over the cooked pasta and enjoy!
