Mango Kale Salsa

Combine black beans, chopped kale, diced mango, red onion, cilantro, and red pepper for a colorful, nutrient-packed salsa. Enjoy as a dip or a topping for a burst of flavor and health benefits.

Ingredients
  

  • 1 mango
  • 2 kale leaves
  • 1 red pepper
  • 1 15 oz can of black beans
  • ½ red onion
  • ½ bunch of cilantro
  • ½ jalapeño more or less depending on your spice tolerance
  • 1 garlic clove
  • ½ lime juiced
  • salt and pepper to taste

Instructions
 

  • Finely chop all red pepper, jalapeño, onion, cilantro, garlic clove, and mango then combine.
  • Finely chop kale leaves and massage with a pinch of salt (this allows them to be less chewy and easier to digest).
  • Combine the massaged kale with the other ingredients, add your lime juice, salt, and pepper and enjoy!
