Mango Kale Salsa
Combine black beans, chopped kale, diced mango, red onion, cilantro, and red pepper for a colorful, nutrient-packed salsa. Enjoy as a dip or a topping for a burst of flavor and health benefits.

- 1 mango
- 2 kale leaves
- 1 red pepper
- 1 15 oz can of black beans
- ½ red onion
- ½ bunch of cilantro
- ½ jalapeño more or less depending on your spice tolerance
- 1 garlic clove
- ½ lime juiced
- salt and pepper to taste
Finely chop all red pepper, jalapeño, onion, cilantro, garlic clove, and mango then combine.
Finely chop kale leaves and massage with a pinch of salt (this allows them to be less chewy and easier to digest).
Combine the massaged kale with the other ingredients, add your lime juice, salt, and pepper and enjoy!
