Ingredients
  

  • 1 bunch of kale
  • pinch of salt/squeeze of lemon juice
  • ½ cup uncooked quinoa
  • ¾ bundle of parsley ~⅓ cup
  • ½ bundle of dill ~¼ cup
  • cup walnuts
  • cup sunflower seeds
  • 1 sweet potato cubed
  • 1 15 oz can of chickpeas
  • 4-5 green onions

Simple Lemon Dressing

  • 1 ½ lemons juiced
  • cup olive oil
  • 1 tablespoon maple syrup more if desired
  • salt and pepper to taste
