Vegan Loaded Roasted Red Pepper Sando

Assemble a sandwich with roasted red peppers, microgreens, vegan pesto, hummus, avocado, thinly sliced cucumbers, zucchini, and red onion on your choice of bread (sourdough is my fav) for a nutritious, veggie-packed meal!

Ingredients
  

  • 1 bell pepper sliced
  • 1 zucchini thinly sliced
  • red onion thinly sliced
  • 1 avocado
  • 1 small cucumber sliced
  • 2 tablespoon pesto feel free to make your own or use store bought
  • 2 tablespoon hummus feel free to make your own or use store bought
  • handful microgreens
  • 2 slices of your fav bread per sandwich! (so 6 if making all 3 servings)

Instructions
 

  • Preheat your oven to 425F and roast your bell peppers with salt, pepper, and a bit of avocado oil for 20 minutes. Let them cool for 10 min.
  • Using a mandolin or great knife skills, thinly slice your onion, cucumber, zucchini, and avocado
  • Sautee your thinly sliced zucchini until they're browned (around 5 minutes with some avocado oil and salt)
  • Lightly toast your bread then spread your hummus and pesto on and add the rest of your toppings. ENJOY!
