Ginger Vinaigrette Hearty Vegan Salad

Toss apples, carrots, sweet potatoes, chickpeas, red pepper, avocado, hemp seeds, and pecans with a homemade ginger vinaigrette for a nutrient-packed vegan salad.

Ingredients
  

  • 1 head of Romaine or other lettuce of choice
  • 1 pink lady apple
  • ½ cup shredded carrots
  • 1 sweet potato roasted
  • 1 15 oz can of chickpeas crisped in the air fryer
  • 1 red pepper
  • ½ cup pecans
  • 1 avocado
  • cup hemp seeds

Ginger Vinaigrette

  • 6 tablespoon olive oil
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon mustard
  • ½ teaspoon ground ginger
  • salt to taste

Instructions
 

  • Chop all of your fruits and vegetables
  • Cook your sweet potato chunks in the air fryer 15 min 400F and your chickpeas for 15 min 400F in the air fryer
  • Combine all of your dressing ingredients then pour on top of your salad fixings and enjoy!!
