Loaded Veggie Tofu Bowl w/ Ginger Sauce
This vegan tofu veggie bowl is loaded with fiber, vitamins, minerals, and delicious flavor! Not to mention, it's topped with ginger, sesame seeds, saurkraut, and green onions.

- 1 cup brown rice cooked as on packaging
- 1 purple cabbage chopped
- 1 lb green beans chopped
- 2 heads of broccoli chopped
- 2 bell peppers chopped
Tofu
- 1 16- oz pack of tofu pressed
- 1-2 tablespoon cornstarch
- 1 tablespoon soy sauce/tamari
Ginger Sauce
- 2 ½ tablespoon tamari
- 1 tablespoon avocado oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup
- 1 ½ tablespoon grated fresh ginger
- 1 tablespoon chili garlic sauce
- 2 teaspoon lime juice fresh is best
Toppings (optional but highly recommended)
- fresh ginger I get mine from whole foods in a small can
- saurkraut
- green onions chopped
- sesame seeds
Cook your rice, this will take the longest!
Tear your pressed tofu into bite sized chunks then coat with cornstarch and soy sauce. Put in the airfryer for 16 min at 400F, shaking ½ way through
Mix all of the ingredients together to make the sauce
Chop all your veggies and sautee in a pan with some oil for 5-10 minutes until they soften a bit
Once the tofu is done, add a bit of sauce to a pan and heat for a minute, then add your tofu and coat, turn off eat.
Assemble your bowl with your rice, veggies, tofu, and toppings. Pour some sauce on top and ENJOY!
