Kale and Pasta Salad with Pesto Dressing
This vegan kale and pasta salad with pesto dressing is the perfect meal prep lunch. Combine all of your ingredients for a variety of flavors and nutrients and top with homemade pesto!

- 1 bunch of kale
- 1 sweet potato diced
- 1 can of chickpeas
- 8 oz of protein pasta of choice
- 1 red pepper
- 1 avocado
Spinach Pesto Viaigrette
- 2 handfuls of spinach
- 2 handfuls of basil
- ⅓ cup good olive oil
- ¼ cup walnuts
- 1 lemon zest
- juice of 1 lemon same lemon as above!
- 1 clove garlic
- salt
Cook your pasta as instructed
Dice your sweet potatoes and pour your chickpeas in the airfryer with a bit of oil and salt for 400F 15 minutes shaking ½ way through
Put all ingredients for the spinach pesto vinaigrette in the food processor until combined
Massage your kale with some salt, lemon, or olive oil and let it sit
Add all ingredients to your kale and mix in your vinaigrette! Enjoy!
