Butternut Squash Soup

This vegan butternut squash soup comes together in 1 pot. It's creamy packed with flavors, and delicious!

Ingredients
  

  • 2 tablespoon olive oil
  • 1 large butternut squash about 2 cups cubed
  • 1 yellow onion chopped
  • 3 garlic cloves
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon fresh ginger chopped
  • 3-4 cups vegetable broth good quality makes a difference
  • salt & pepper to taste
  • Bread to dip!

Instructions
 

  • Dice and cube your onions and butternut squash
  • Add oil, onion, salt, and pepper to a large pot and sauté for ~5 minutes
  • Add the cubed butternut squash and cook for 8-10 minutes
  • Add garlic, sage, ginger, and rosemary and stir in. Cook for 30 seconds (until fragrant) then add the vegetable broth. Boil, cover, then reduce to a simmer. Cook until the squash is squishy, 20-30 minutes
  • Use an Immersion hand blender to blend until smooth (if you don't have one then put everything into your blender and blend until smooth).
  • Enjoy with your favorite bread and get cozy!
