Feta Spaghetti Squash

This vegan feta spaghetti squash is simple, creamy, and delish! Just pop your tomatoes, garlic, spices, and feta on top of your spaghetti squash and put it in the oven for 1 hour then mix!

Ingredients
  

  • 1 spaghetti squash
  • 1 block of vegan feta 8 oz (can use non vegan if not vegan)
  • 4 garlic cloves
  • 1 carton of tomatoes
  • cup chickpeas
  • salt & pepper to taste
  • 2 tablespoon olive oil

Instructions
 

  • Preheat oven to 400F!
  • Cut your spaghetti squash in ½ then deseed. Split your feta in ½ then put it inside of each ½ of the spaghetti squash. Drizzle with olive oil then add your garlic, salt, pepper, feta, chickpeas, and tomatoes. Finish with a bit more olive oil
  • Put in the oven for ~1 hour until tender then mix it all together and enjoy!
