Pumpkin Vodka Pasta Sauce
This vegan vodka pumpkin sauce pasta comes together in 30-minutes and is perfectly creamy from coconut milk and has a spicy kick!

- 2 tablespoon avocado oil
- 3 cloves garlic minced
- 1 ½ teaspoon calabrian chili peppers can sub for red chili flakes, add more if more heat is desired, fuego!
- 1 onion chopped
- 1 cup pumpkin puree
- ¼ cup vodka
- 1 cup coconut milk
- 8 oz pasta
- ½ cup dairy free parmesan
- ¼-1/2 cup pasta water
Boil your water and cook your pasta
In a pan on medium-low heat, add avocado oil, garlic, chili flakes, 1 min
Add chopped onion then sautee for 5-7 minutes until soft. Add salt & pepper
Add pumpkin puree and cook for 1-2 minutes. Add vodka then simmer for a few minutes
Add the coconut milk/cream and simmer for 5 minutes
Add pasta water and parmesan then stir in your pasta. Enjoy!
