Pumpkin Vodka Pasta Sauce

This vegan vodka pumpkin sauce pasta comes together in 30-minutes and is perfectly creamy from coconut milk and has a spicy kick!

Ingredients
  

  • 2 tablespoon avocado oil
  • 3 cloves garlic minced
  • 1 ½ teaspoon calabrian chili peppers can sub for red chili flakes, add more if more heat is desired, fuego!
  • 1 onion chopped
  • 1 cup pumpkin puree
  • ¼ cup vodka
  • 1 cup coconut milk
  • 8 oz pasta
  • ½ cup dairy free parmesan
  • ¼-1/2 cup pasta water

Instructions
 

  • Boil your water and cook your pasta
  • In a pan on medium-low heat, add avocado oil, garlic, chili flakes, 1 min
  • Add chopped onion then sautee for 5-7 minutes until soft. Add salt & pepper
  • Add pumpkin puree and cook for 1-2 minutes. Add vodka then simmer for a few minutes
  • Add the coconut milk/cream and simmer for 5 minutes
  • Add pasta water and parmesan then stir in your pasta. Enjoy!
