French Onion Soup Pasta
This vegan rendition of french onion soup pasta is so flavorful from the caramelized onions and comes together in just one pot!

- 3 yellow onions chopped
- 3 tablespoon vegan butter
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 1 teaspoon of thyme fresh or dried
- 2 cups / 10 oz. pasta
- 3 ½ cups vegetable broth try to use a super flavorful one
- ¾ cup coconut cream
- ½ cup vegan parmesan cheese
Slice your onions then add to a pan with olive oil and butter and cook on medium low for 25-30 minutes stirring frequently. They should be caramelized and golden.
Add thyme, garlic, pasta, and vegetable broth. Simmer for 15 min on medium-high (until most liquid is absorbed). Stir from time to time
Add cream and cheese. Stir to combine, simmer for a few minutes until the cheese melts. Garnish and enjoy!
