The Origins of Nutter Butter Cookies
Nutter butters, the OG, was introduced in 1969 as a sandwich cookie. There are around one billion eaten every year! I love the nostalgia these nutter butters bring when I eat them. It's the unique shape as well as the peanut butter inside that bring back memories of childhood. However, Nutter Butter cookies ingredient list is not good. There are tons of added oils, high fructose corn syrup, and artificial flavors. So, I wanted to recreate this treat but make it refined-sugar free as well as gluten-free and have far fewer ingredients. Which is where the 3 ingredients come into play.
3-Ingredients and How to Assemble
These nutter butters are made with oat flour (just ground up oats), peanut butter, and maple syrup for sweetness.
All you need to do is mix the ingredients together then roll them into 2 small balls on a baking sheet. Place the small balls next to each other then press down on one of the balls with a fork one way then the other way in a criss cross pattern. Repeat this for the other ball. Bake them in the oven, then allow them to cool after.
Once they're cooled, spread peanut butter (I love a crunchy peanut butter to contrast and add some texture) over 1 cookie then add another cookie on top. Enjoy!
Nutter Butter
Ingredients
- -1 cup oat flour
- ⅓ cup maple syrup or date syrup or honey
- ½ cup nut butter peanut butter has the best taste here but adjust as you'd like
Instructions
- Preheat the oven to 350F
- Combine all ingredients in a bowl then roll into balls then connect 2 balls together on a sheet
- Press down with a fork to create a criss cross pattern on each ball
- Bake for 10-12 min then let cool
- Once fully cooled, spread additional nut butter on the backside and sandwich 2 together
- Enjoy!
