Cozy up with a bowl of this lentil soup! I love that it takes only 30-minutes to make and is easily prepped all in 1 pot. In the winter I become obsessed with my immersion blender and make creamy soups with it. This lentil soup has a few simple ingredients and is finished with a squeeze of fresh lemon and cilantro/parsley.
Nutrients
Lentils are an excellent source of plant-based protein and has B vitamins, iron, magnesium, potassium, and zinc. When they're blended, they also provide a creamier, thicker texture to this soup.
This soup uses onions and carrots which add more fiber, vitamins, and minerals. Carrots have antioxidants and are a good source of biotin, potassium, and vitamins A. These are the staples of a good soup as they add flavor and come alive once sautéed and cooked.
Vegetable Broth
Choosing the right vegetable broth, especially when it's one of the few ingredients in a dish, is crucial! I typically don't make my own at home. I have, and it tastes delicious, but it's time consuming. So I typically go with store bought. It may take you a few tries to find a vegetable broth you like. And depending on the broth you choose, it may add more or less flavor to the soup and dish. So, just experiment with various vegetable broths! One of my favorites is Pacific Foods, and I also get the Whole Foods 365 brand frequently.
Lentil Soup
Ingredients
- 1 yellow onion diced
- 2 tablespoon olive oil
- 2 carrots chopped
- 1 ½ teaspoon cumin
- 1 cup dried lentils
- 4 cups vegetable broth
- salt + pepper to taste
- 1 lemon juiced
- fresh cilantro or parsley to top
Instructions
- Chop your onion then add it to a pot with the oil and cumin. Cook for 5 minutes then add your lentils, carrots, salt, pepper and stir.
- Add in your vegetable broth and bring to a boil then cover the pot and reduce heat to a simmer until the lentils are cooked about 15-20 minutes
- Turn the heat off, add your lemon juice and use an immersion blender (or pour into a standing blender) until smooth. Garnish with fresh herbs, and serve with bread!
