Did someone say double chocolate?? These gluten-free, refined sugar-free, and vegan double chocolate baked oats are one of the easiest meal prep breakfasts. They're also insanely delicious and packed with nutrients (omega-3's from those chia seeds)! I mean, who can say no to double chocolate?? Definitely not me!
Benefits of Chocolate
Chocolate is packed with antioxidants. When baking with chocolate I look for cocoa powder that has no other added ingredients and use dark chocolate chips (72%). The antioxidants in dark chocolate can lower your blood pressure, and help with overall heart health. Chocolate has also been shown to boost brain power! How cool!
Baked Oats in One Pan
I not only love the chocolate in this recipe, I love that it comes together in the same pan you cook it in! This is the pan, I use for this recipe (and any baked oats tray recipe).
All you need to do is mash your bananas then add the rest of your ingredients in the pan (no oil needed on the bottom) and stir. It's that easy! You're going to want to let the mixture sit for 5-10 minutes to allow everything to incorporate then all you need to do is stick it in the oven and pull it out 35-40 minutes later.
Toppings
You can top these baked oats with so many things! I made these for the first time around the holidays and added crushed candy canes to the top for an extra flavor. Sticking with dark chocolate chips as the topping is also a great call. If you're a berry person, adding strawberries or raspberries on top provides the perfect pairing for the double chocolatey goodness!
Double Chocolate Baked Oats
Ingredients
- 2 ¼ cups oat flour
- 2 teaspoon baking powder
- 3 tablespoon chia seeds
- 1 ½ cup almond milk
- 3 ripe bananas mashed
- ⅓ cup maple syrup
- 2 teaspoon vanilla
- ⅓ cup cocoa powder
- ⅓ cup protein powder optional
- chocolate chips on top
Instructions
- Preheat your oven to 350F.
- Mash your bananas in a 9X13 inch baking dish. Then, pour the rest of your ingredients (except the chocolate chips) in. Mix until combined then pour chocolate chips on top. Let the mixture sit for 5-10 minutes
- Bake for 35-40 minutes. Let it cool then enjoy!
