Nothing says summer like eating ice cream. And nothing says summer more than a blueberry lemon ice cream! This purple creation packs in tons of antioxidants from the wild blueberries and has a freshness from the lemon juice.
Making Vegan Ice Cream
Making ice cream at home can definitely be scary at first, but once you do it, there's no turning back! I love that when I'm eating ice cream I make, I know that there is no refined sugar and it's sweetened from some maple syrup and the berries.
So, for my birthday one year, my mom got me a ninja creami. It was LIFECHANGING! I'm not just saying that so you buy one, I'm genuinely in love with my ninja creami. I use it to make homemade ice creams and sorbets at least once or twice a week. I also love making acai bowls in them. For this recipe and other vegan ice cream recipes, it takes on the consistency of dairy ice cream while being made with 100% non dairy milk bases. It's magical!
If you don't have a ninja creami, fear not! This recipe can still be made and tastes delicious. It just may not be AS creamy, but it still will be creamy! All you need to do is blend all of your ingredients together in a blender then stick it in a freezer safe container for 6 hours. Let it sit outside your freezer for a few minutes before scooping, then enjoy!
Toppings
The toppings, or mix ins as they're known in the ninja creami world, are what take your homemade ice cream to the next level. For me, I love a good pint of Ben & Jerry's ice cream because of all of the added chunks of cookies and brownies and fudge inside. So, making ice cream at home should be no different! There should be lots of goodies for added flavors and textures.
For this, I wanted to add some nuts, chocolate (I am a sucker for chocolate), and sea salt flakes. The sea salt adds a depth of flavor that helps enhance the lemon and blueberry contrast even more.
Blueberry Lemon Ice Cream
Ingredients
- 1 cup blueberries
- 2 tablespoon maple syrup
- 1 lemon juiced
- ¾ cup oat milk
- ½ cup coconut milk
Optional Toppings
- chocolate chips
- pecans
- sea salt flakes highly recommend to add more depth
Instructions
- Whisk everything together in a bowl then pour into your creami container. Stick in the freezer for at least 8 hours.
- Let your ninja creami do some magic (likely will need to remix once or twice to get the perfectly creamy consistency) then add your toppings and mix in!
- Enjoy!
