When lunch time rolls around, I feel stuck on what to make. You know I love a good salad, but sometimes even I get tired of salads and want to switch it up! I wanted to combine one of my favorite pulled tofu burger recipes but make the flavors be completely different and add in some freshness. So, I made this Sweet and Smokey Tofu Sandwich. It's topped with romaine, pickled onions, a dill avocado mash, and smothered in jam. It's not only colorful, it's delicious!
Sweet and Smokey Flavor Combo
The sweetness from the jam compliments and brings out the smokey flavors in the spices on the shredded tofu. There is an aromatic contrast between the smokiness of the shredded tofu and the sweet smoothness of the strawberry jam.

Meal Prep Tofu Sandwich
One of the best parts of this recipe is that it's so easy to meal prep as a grab and go lunch (or even breakfast)!
To assemble, toast the english muffin and add the romaine lettuce on top. Then add the shredded tofu and pickled onions and finish it with jam to add the sweetness!
Sweet and Smokey Tofu Sandwich
Ingredients
Tofu
- 1 block firm tofu
- 1 tablespoon cornstarch
- 1 ½ teaspoon garlic powder
- 2 ½ teaspoon smoked paprika
- 1 teaspoon coriander
- 2 tablespoon tamari
- 1 tablespoon avocado oil
- salt/pepper
Avocado Mash
- 1 avocado
- ¼ cup parsley minced
- 3 tablespoon chives minced
- 3 tablespoon dill minced
- 1 garlic clove
- zest and juice ½ lime
The Fixin's
- bagels or english muffins
- romaine lettuce
- pickled onions
- strawberry jam
Instructions
- Preheat oven to 425F
- Shred your tofu then top with your spices. Toss the tofu with your hands until it's coated and spread into an even layer on your tray. Bake the tofu for 15 minutes, toss, then put in for another 10 minutes.
- Mash your avocado with fresh herbs, garlic, and lime
- Assemble your sandwich with toasted bread of choice, avocado mash, pickled onions, shredded tofu, lettuce, jam and then wrap in parchment paper
- Feel free to wrap in foil if you want to meal prep and store this in the fridge for 4-5 days!
