Have you ever wanted pasta but felt like you needed to also get some veggies in your meal? FEAR NOT because this Hidden Veggie Pasta with Vegan Sausage is loaded with 7 vegetables. All you need to do is chop your veggies and put them on a pan in the oven for 45 minutes then blend it. I've had this pasta sauce with protein pasta before but this time I wanted to have some plant based sausages in there to add a variety of textures.
Vegetable Nutrition Breakdown
Vegetables are the unsung heroes of the culinary world, brimming with vitamins, minerals, and fiber, essential for maintaining a healthy body and mind. However, incorporating enough of them into our diet can sometimes be a challenge. This is where my secret sauce comes into play, sneaking in nutrient powerhouses like tomatoes, carrots, bell peppers, and zucchini. Each of these vegetables brings its own set of health benefits to the table:
- Tomatoes: Rich in vitamins C and K, potassium, and folate, not to mention the antioxidant lycopene, which has been linked to reduced risk of heart disease and cancer.
- Carrots: High in beta carotene, which your body converts into vitamin A, crucial for good eyesight, growth, development, and immune function.
- Celery: Provides antioxidants and important minerals such as potassium and vitamin K, supporting bone health and blood pressure regulation.
- Bell Peppers: Packed with vitamins A and C, two powerful antioxidants that help maintain skin health and immune function.
- Garlic: Known for its medicinal properties, including its ability to combat sickness and improve heart health.
- Zucchini: High in fiber, water, vitamin A, and other antioxidants, promoting a healthy digestive system.
- Onions: Rich in vitamins C and B, they are potent in antioxidants and support immune health.
Storage of Hidden Veggie Pasta Sauce
I love using this pasta sauce for 4 servings the night of or to have leftovers. It can be stored in the fridge up to 3-4 days. I like saving a bit of sauce and putting it in a freezer safe container to have ready to defrost and use on future pastas!
Hidden Veggie Pasta with Vegan Sausage
Ingredients
- 4 tomatoes
- 2 carrots
- 2-3 celery ribs
- 1 red bell pepper
- 1-2 zucchini
- 1 yellow onion
- 1 head of garlic
- 2 tablespoon olive oil
- 2 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoon dried thyme
- 2 teaspoon dried oregano
- 2 teaspoon red pepper flakes
- ⅓-1/2 cup non-dairy milk or pasta water. I used almond milk
- Optional: parsley to top
Instructions
- Preheat oven to 400F and roughly chop all veggies and put them on a parchment lined baking sheet. Put some avocado oil and salt/pepper/oregano/thyme on the veggies
- Stick them in the oven for 45 minutes then add the veggies to the blender and squeeze out the garlic cloves from the skin. Add your red pepper flakes and almond milk/pasta water.
- Blend! It took me about 3-5 minutes of blending to get this mixture super creamy.
- Cook your plant based sausage of choice.
- Add to your cooked pasta to the sauce, top with your sausage, parsley, and enjoy! I topped mine with parsley, sea salt flakes, and red pepper flakes.
