This tofu chive cream cheese comes together in 5-minutes (plus refrigeration time) and is loaded with protein and flavor. Just blend everything together, add in your chives then let it sit in your fridge for 1-2 hours. It's a delicious and protein forward alternative to cream cheese!
Tofu as the Base
At first, I was skeptical of tofu as a replacement to my cream cheese. But, in an effort to go more plant based, I wanted to give it a try. I knew the flavors had to really stand out as tofu on its own is a neutral flavor. So, I decided to add chives and onion powder to give it more of a flavor. Don't skimp out on the salt either because it will enhance the nutritional yeast, onion powder, and chives.
Tofu is a great base to the spread because it packs in plant based protein early in the day so it will keep you full longer. It also is packed with calcium, manganese, iron, and other vitamins and minerals.
Cream Cheese on a Bagel
When going more plant forward and seeing bagel shops have so many types of cream cheese options, I started wondering why we put cream cheese on bagels. First, there's a flavor and texture component. The contrast between the dense and chewy bagel and the creamy texture of the cream cheese adds variety and contrast to every bite. There is also a tradition component. Jewish bagel shops started serving bagels with cream cheese. It was easy to keep in place given the thickness of the cream cheese and you could eat it with one hand. Not to mention, the fat in the cream cheese enhanced the other flavors and was delicious.
In this recipe, there is still some fat to help it bind and bring out flavors from the olive oil and tahini, but it's mostly a protein based spread. It pairs so well with my air fryer za'atar bagel recipe!
Tofu Chive Cream Cheese
Ingredients
- 8 oz tofu ½ a 16 oz block
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 1 ½ tablespoon lemon juice ½ small lemon
- 1 tablespoon nutritional yeast
- 1 teaspoon apple cider vinegar
- salt to taste
Add Ins (Can Customize)
- 3 tablespoon fresh chives
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Put all ingredients, including add ins if you'd like any, to a blender or food processor and process until smooth. Chop your chives then add them to the cream cheese.
- Put in the fridge for 1-2 hours to thicken then spread and enjoy!
