These sweet potato brownies are made with 10 simple ingredients and come together in 30 minutes! That's right, brownies that only take 30 minutes from start to finish to make, can't get much better than that! The Power of the Sweet Potato
Sweet potatoes are often called a superfood. So I thought, why not stick a superfood in my brownie?! Sweet potatoes pack a good amount of vitamin A, vitamin C, and manganese. They also are fibrous and a brilliant orange color.
For this recipe, I decided to microwave my sweet potato vs. roasting for 45-60 minutes. It was my first time microwaving a potato, and to my pleasant surprise, in just 7 minutes, my hard sweet potato was transformed into a steamy soft potato! This really helped cut down the time of making these brownies. I remember growing up and making brownies and they took FOREVER to cook in the oven, you really had to plan ahead if you wanted to eat them that night. (Or at least I did since my parents had a strict 8:30pm curfew on school nights...)
Brownies vs. Brownie Bars?!
Okay, so these sweet potato brownies are, I feel like, technically brownie bars?! I cooked these in a loaf pan, made for banana breads (and I guess other breads but I've truly only ever used my loaf pan for banana bread) so they take up only ½ the space of a traditional square 8X8 brownie pan.
I also cut the brownie into a bar shape, not a traditional square. Okay so maybe in order to be a brownie in my mind, they need to be square. These brownie bars still have the fudge-y consistency of a brownie and thickness, they just are in rectangles. Oh, and I added a layer of melted chocolate on top because it felt like the right thing to do, and it was.
Finish it off with some flakey sea salt to amplify the chocolate flavor and bring out even more sweetness, then enjoy!
Sweet Potato Brownies
Ingredients
- 1 cup mashed sweet potato 1 sweet potato
- 1 ripe banana mashed
- ¼ cup maple syrup
- ⅓ cup peanut butter
- ½ cup cacao powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ¾ teaspoon salt
Instructions
- Preheat your oven to 350F and grease a bread loaf pan
- Wash your sweet potato then dry and stick with a fork 3-4 times. Microwave your sweet potato (5-7 minutes or so) until soft. Peel the skin off then mash the sweet potato in a large bowl.
- Add your banana to your sweet potato bowl and mash. Add the remaining wet ingredients then mix your dry ingredients and stir until smooth.
- Transfer your batter to your greased bread pan then bake for 13-17 minutes.
- Icing: To make your icing, melt your chocolate and coconut oil and mix until smooth and combined.
- Let your cake cool completely before icing then top with sea salt flakes and enjoy!
