Not to mention it has a zingy ginger sauce that ties it all together! The ginger sauce adds a kick of flavor and spice. This dish is packed with fiber from the brown rice as well as the veggies. This dish is a great representation of eating your colors!
Veggie Bowl Toppings
I love loading this bowl with toppings like saurkraut for gut health, ginger, sesame seeds, and green onions. The toppings add a punch of flavors and textures as well as added health benefits. Ginger is known to ease digestive discomfort and has anti-inflammatory properties from the gingerol. The green onions are nutrient rich and high in vitamins A, C, and K. These vitamins help with eye health, supporting your immune system, and bone health.
What Veggies to Include?
It's totally up to you what veggies you'd like to include! Which is another reason this dish is great! Red peppers are vitamin C powerhouses and broccoli is rich in vitamins K, C, and A along with minerals like potassium and folate. I love adding cabbage because it's high in fiber and when cooked down pairs so well with the brown rice and crispy tofu.
Crispy Tofu
The key to crispy tofu is a few things. 1. Make sure you get firm tofu and press it for a few minutes so a bunch of the water comes out and the tofu can hold the flavors you're adding to it. 2. Make sure you coat your tofu with some cornstarch to get the crispy exterior in your air fryer. And if you don't have an air fryer, you can use the oven and cook the tofu for a bit longer.

Loaded Veggie Tofu Bowl w/ Ginger Sauce
Ingredients
- 1 cup brown rice cooked as on packaging
- 1 purple cabbage chopped
- 1 lb green beans chopped
- 2 heads of broccoli chopped
- 2 bell peppers chopped
Tofu
- 1 16- oz pack of tofu pressed
- 1-2 tablespoon cornstarch
- 1 tablespoon soy sauce/tamari
Ginger Sauce
- 2 ½ tablespoon tamari
- 1 tablespoon avocado oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup
- 1 ½ tablespoon grated fresh ginger
- 1 tablespoon chili garlic sauce
- 2 teaspoon lime juice fresh is best
Toppings (optional but highly recommended)
- fresh ginger I get mine from whole foods in a small can
- saurkraut
- green onions chopped
- sesame seeds
Instructions
- Cook your rice, this will take the longest!
- Tear your pressed tofu into bite sized chunks then coat with cornstarch and soy sauce. Put in the airfryer for 16 min at 400F, shaking ½ way through
- Mix all of the ingredients together to make the sauce
- Chop all your veggies and sautee in a pan with some oil for 5-10 minutes until they soften a bit
- Once the tofu is done, add a bit of sauce to a pan and heat for a minute, then add your tofu and coat, turn off eat.
- Assemble your bowl with your rice, veggies, tofu, and toppings. Pour some sauce on top and ENJOY!
