Butternut Squash Soup
Ingredients
- 2 tablespoon olive oil
- 1 large butternut squash about 2 cups cubed
- 1 yellow onion chopped
- 3 garlic cloves
- 1 tablespoon fresh sage chopped
- 1 tablespoon fresh rosemary chopped
- 1 teaspoon fresh ginger chopped
- 3-4 cups vegetable broth good quality makes a difference
- salt & pepper to taste
- Bread to dip!
Instructions
- Dice and cube your onions and butternut squash
- Add oil, onion, salt, and pepper to a large pot and sauté for ~5 minutes
- Add the cubed butternut squash and cook for 8-10 minutes
- Add garlic, sage, ginger, and rosemary and stir in. Cook for 30 seconds (until fragrant) then add the vegetable broth. Boil, cover, then reduce to a simmer. Cook until the squash is squishy, 20-30 minutes
- Use an Immersion hand blender to blend until smooth (if you don't have one then put everything into your blender and blend until smooth).
