- a pinch of salt
- ⅓ + 1 tablespoon water
Filling
- ½ cabbage chopped
- 8 oz tofu shredded
- 2 teaspoon soy sauce
- 1 teaspoon hoisin sauce
- 1 teaspoon sriracha
Gochujang Sauce
- 1 tablespoon Gochujang
- 1 tablespoon peanut butter
- 2 teaspoon soy sauce
- 2 teaspoon maple syrup
- 2 teaspoon apple cider vinegar
- water to thin
Instructions
- To start, make the dumpling dough by stirring together your flour, salt, and water. Once combined, put it on a floured cutting board and knead your ingredients for a few minutes. Set aside
- To make your filling, shred your tofu and chop your cabbage then combine with soy sauce, hoisin sauce, and sriracha
- Get a small bowl of water and set to the side of your cutting board
- Divide the dough into 18-20 pieces on the floured cutting board then roll out into small circles.
- Put some of your mixture inside one of the small circles, be careful not to overfill (I would start with 1 tablespoon of filling). Then, wet one of the edges of the dough circle with the smallest bit of water from your bowl, then fold the dough to make a dumpling shape. Repeat with the rest of your dough.
- Steam some water in a pan or pot that has a steaming rack. Once it’s steaming, put your dumplings in for 5-7 minutes until fully steamed.
- In the meantime, in a small bowl, mix together all of your gochujang sauce ingredients
- Storage: these dumplings can be stored in an airtight container in the fridge for up to 3 days. Microwave with a dash of water to reheat and store the sauce separately in the fridge
