    This vegan rendition of french onion soup pasta is so flavorful from the caramelized onions and comes together in just one pot!

    Ingredients
      

    • 3 yellow onions chopped
    • 3 tablespoon vegan butter
    • 1 tablespoon olive oil
    • 3 cloves garlic minced
    • 1 teaspoon of thyme fresh or dried
    • 2 cups / 10 oz. pasta
    • 3 ½ cups vegetable broth try to use a super flavorful one
    • ¾ cup coconut cream
    • ½ cup parmesan cheese can use vegan

    Instructions
     

    • Start by getting your goggles on, peeling your onions, and praying for not too many tears tonight.
    • Slice your onions then add them to a pan with oil and butter
    • Cook on medium low for 25-30 minutes stirring frequently. They should be caramelized and golden!
    • To your onion pan, add thyme, garlic, salt, pepper, pasta, and vegetable broth.
    • Simmer for 15 min on medium-high (until most liquid is absorbed). Stir from time to time
    • Add your coconut milk and grated parmesan cheese.
    • Stir to combine, simmer for a few minutes until the cheese melts then garnish with parsley
    • Storage: airtight container in the fridge for up to 4 days. I would add a splash of vegetable broth when reheating
