Banana Split Breakfast! You're probably thinking to yourself, are you kidding me? I can have a banana split for breakfast and Sabrina's saying it's healthy?! That's right! You can!! And you likely will after hearing how simple this 5-minute breakfast is.
Now, before you get TOO excited, there's no ice cream in this (though you could I guess make nice cream, but that's a different recipe for a different time). This banana split features plenty of fruit, protein from the yogurt and nutty granola for tons of crunch! I love this recipe because it feels so fresh and also so playful. Calling it a banana split immediately takes me back to ice cream Sundaes on Sundays!
Nutrition Info!
Bananas, the base of our split, are not just for show. They're a fantastic source of fiber, potassium, and vitamins B6 and C, making them perfect for energy and maintaining heart health. Then, we sprinkle wild blueberries, a superfood known for their antioxidants, which help fight aging and support brain health. Not to mention, their sweet yet tart flavor complements the creamy texture of bananas beautifully.
We're not stopping there. Mangoes add a tropical twist, bringing in more vitamins C and A. This promotes immune function and skin health. The strawberries offer additional vitamin C and manganese, perfect for that morning nutrient boost. The crunch comes from granola, loaded with nuts providing essential healthy fats, protein, and fiber, keeping you satisfied and energized throughout the morning. Of course you can switch this up and add your favorite fruits to this breakfast!
To tie it all together, a dollop of vegan yogurt adds creaminess without the dairy. It adds a creamy sauce to tie the dish together and is a little nod to ice cream in a traditional banana split. This breakfast banana split is a bowl full of vibrant colors, diverse textures, and a plethora of health benefits, making mornings something to truly look forward to.
