BBQ Pulled Tofu Burger
Ingredients
- 1 package of tofu shredded
- 1-2 tablespoon soy sauce
- 2 teaspoon garlic powder
- little oil on the baking dish
BBQ Sauce
- 1 onion
- 2 garlic cloves
- 1 tablespoon sriracha
- 3 tablespoon ketchup
- 2 tablespoon soy sauce
- 2 tablespoon apple cider vinegar
- 2 tablespoon maple syrup
- water to thin
Coleslaw
- ¼ green cabbage
- ¼ purple cabbage
- 2 tablespoon cilantro
- 4 tablespoon vegan mayo
- 1 lime squeezed
- 1 tablespoon maple syrup
- ¾ teaspoon curry powder
- 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 350F
- Shred your pressed tofu with a grater then toss with soy sauce and garlic powder. Place on a baking sheet and bake for 30 min (tossing)
- Combine all your coleslaw ingredients, chopping your cabbage (can put in the fridge until the rest of the recipe is ready)
- Once the tofu has a few minutes left in the oven, start the bbq sauce. Sautee your onion and garlic in a pan with some avocado oil for 3-5 minutes. Then add the rest of the bbq toppings, pouring some water to thin
- Let it bubble for a few minutes then add your crispy cooked tofu and cover in the sauce.
- Serve on a bun of choice with coleslaw at the bottom and the pulled bbq tofu over it. Enjoy!
