You guys probably know by now banana bread is a STAPLE in my house- as it rightfully should be! It's super simple to make, uses my ripe bananas, and is a great breakfast to meal prep for the entire week. It's also refined sugar-free with minimal added sugar. Imagine waking up to a loaf of banana bread- that's the dream, so make this and have your dreams come true!! This Blueberry Chocolate Chip Banana Bread loaf is a burst of flavors and naturally sweet.
Choosing The Right Banana
Crafting this banana bread begins with the choice of bananas. Go for the super ripe ones, their skins speckled with black. It promises natural sweetness and a perfect moist texture to the bread. These bananas minimize the need for added sweeteners, allowing just a hint of maple syrup to elevate the richness without relying on refined sugars.
How Is This Blueberry Chocolate Chip Banana Bread Vegan?
This banana bread is a testament to the beauty of vegan baking. It showcases how flaxseed acts as an excellent egg substitute, binding the ingredients with its natural gelatinous quality when mixed with water.
The secret to its tender crumb lies in the vegan buttermilk. It's easily made by combining almond milk with apple cider vinegar and letting it sit for about 10 minutes. This simple step introduces a light tanginess while ensuring the bread rises to fluffy perfection.
Storage
This banana bread can be stored on the counter for 2-3 days then moved to the fridge for another 2-3 days. Once it's in the fridge, I like heating it up in the microwave for 15-30 seconds. It gives it that fresh out of the oven warmth. I hope you enjoy!
