You need to try this easy 5 minute high protein brownie batter!! It's refined sugar-free, vegan, and gluten-free. It uses 8 pantry staples and all you need is a bowl and a spoon to whip up. I love making a batch of this (about 4-6 servings, depending on how much batter you want to eat in a sitting) and keeping it in the fridge for the week as something to snack on.
Why You Can't Eat Standard Brownie Batter
There are 2 main reasons why you can't eat typical brownie batter or cookie dough. 1. Flour. You can get sick if you eat unbaked dough or batter made with flour containing germs. Germs are killed only when flour is baked or cooked. So for this recipe, I'm using oat flour instead of white flour. 2. Eggs. Another reason to not eat raw dough or batter is the raw eggs. They may contain salmonella, another germ that can cause food poisoning. Luckily, this recipe is vegan so there are no eggs!
Simplicity to Make
This recipe can be whipped up in 5-minutes and immediately enjoyed. Which is another pro to this recipe! All you need to do is mix all of your ingredients together except your chocolate chips. Then, add your chocolate chips in, mix, put in a jar and enjoy!

It’s no secret that refined sugar, while delicious, isn’t the best for our health, especially when consumed frequently. It can spike blood sugar levels, lead to weight gain, and even affect your mood. That’s why this brownie batter (and most of my desserts) are crafted without it. I think you can still get the sugar flavor with using refined-sugar free alternatives like maple syrup.
Refined sugar is essentially sugar that has been processed to remove the molasses, resulting in a finer grain. It’s everywhere in our diets, from sodas to store-bought desserts. But fear not! There are alternatives like maple syrup, dates, and coconut sugar that are refined sugar-free. These natural sweeteners not only provide a rich depth of flavor but also retain some nutritional benefits.
Storage
You can store this brownie batter in an airtight container in the fridge for up to 1 week. Don't worry, you'll be going through it far before that week is over ;).
Once you remove it from the fridge, wait a few minutes for it to get a bit more to room temperature before spooning and enjoying!
Brownie Batter
Ingredients
- ⅔ cup oat flour
- 3 tablespoon cocoa powder
- 1 scoop protein powder
- ½ teaspoon salt
- ¼ cup maple syrup
- ¼ cup nut butter I used peanut butter
- ⅓ cup non dairy milk + a bit more if it's too grainy
- ¼ cup chocolate chips
Instructions
- Mix all ingredients together except for the chocolate chips.
- Add chocolate chips and mix together to incorporate.
- Enjoy!!
