If you're looking for a creamy soup to stay warm, or feel comforted, try out this creamy carrot ginger lentil soup! It packs in many hearty nutrients. When soup season hits, I become obsessed with my immersion blender! I go pretty wild making one-pot soups that star a plant-based protein, in this case lentils, and veggies. I also love adding a punch of flavor, in this soup it's the ginger.
Nutrition Breakdown
Carrots: Carrots are rich in beta-carotene, which is converted into vitamin A in the body and is essential for good vision. They also contain fiber, vitamin K1, potassium, and antioxidants, which may help protect against certain diseases.
Lentils: Lentils are a great source of plant-based protein and are rich in fiber, folate, iron, and manganese. They also contain polyphenols, which have antioxidant and anti-inflammatory properties.
Ginger: Ginger contains gingerol, a compound with powerful anti-inflammatory and antioxidant effects. It may help reduce nausea, improve digestion, and may help reduce muscle pain and soreness.
Onion: Onions are rich in antioxidants, particularly quercetin, which may help reduce inflammation and lower the risk of chronic diseases. They also contain vitamin C, vitamin B6, and fiber.

Carrot Ginger Lentil Soup
Ingredients
- 1 yellow onion chopped
- 4 cups chopped carrots 12 ish carrots
- 1 ½ tablespoons peeled and minced ginger
- 2 tablespoon avocado oil
- 4 cups vegetable broth
- 1 cup of lentils
- 1 teaspoon garlic powder
- 1 pinch cinnamon
- 1 teaspoon salt
- ½ cup coconut milk
- Optional cilantro top
Instructions
- Cut your onion and carrots and mince your ginger.
- In a pot, add onions with oil and sauté for 5 minutes. Add your carrots, lentils, vegetable broth, ginger, garlic powder, cinnamon and salt and bring to a boil. Simmer for 15-20 min (carrots should be tender)
- Add your coconut milk then blend your soup (immersion blender or in a blender)
- Enjoy!
