Let's talk about chickpeas!! I love chickpeas. They're probably my favorite plant based protein as they're packed with fiber, potassium, B vitamins, iron, and magnesium. They're also extremely versatile. I air fry them and put them in salads, mash them into avocado toast, and blend them into dessert concoctions that have my friends and family questioning if they should try it or not...
Chickpeas in Dessert
At first thought, the idea of chickpeas in a dessert might raise a few eyebrows (it certainly does amongst my family). But!! These humble legumes are a revelation in disguise. Packed with plant-based protein and fiber, chickpeas are a nutritional powerhouse that boosts energy and supports digestion. They also have a very neutral taste. When you blend them and combine them with masking flavors like cashew butter and vanilla, their taste is completely undetectable. They just provide a great source of protein and creaminess!
Why You Can't Eat Standard Cookie Dough?
There are 2 main reasons why you can't eat typical cookie dough. 1. Flour. You can get sick if you eat unbaked dough or batter made with flour containing germs. Germs are killed only when flour is baked or cooked. So for this recipe, I'm using oat flour instead of white flour. 2. Eggs. Another reason to not eat raw dough or batter is the raw eggs. They may contain salmonella, another germ that can cause food poisoning. Luckily, this recipe is vegan so there are no eggs!
Why Refined Sugar-Free
It’s no secret that refined sugar, while delicious, isn’t the best for our health, especially when consumed frequently. It can spike blood sugar levels, lead to weight gain, and even affect your mood. That’s why this chickpea cookie dough (and most of my desserts) are crafted without it. I think you can still get the sugar flavor with using refined-sugar free alternatives like maple syrup.
Refined sugar is essentially sugar that has been processed to remove the molasses, resulting in a finer grain. It’s everywhere in our diets, from sodas to store-bought desserts. But fear not! There are alternatives like maple syrup, dates, and coconut sugar that are refined sugar free. These natural sweeteners not only provide a rich depth of flavor but also retain some nutritional benefits.
Chickpea Cookie Dough
Ingredients
- 1 15 oz can of chickpeas rinsed
- ¼ cup cashew butter I used cashew butter but feel free to use your favorite or even seed butter, just note it may have more of the taste of that nut/seed
- 3 tablespoon maple syrup
- 3 tablespoon oat flour
- 1 ¾ teaspoon vanilla extract
- ½ teaspoon salt
- ¼-1/3 cup chocolate chips
Instructions
- Thoroughly rinse and drain your canned chickpeas then add them to a high speed blender or food processor along with your nut butter, vanilla, maple syrup, salt, and oat flour.
- Blend until combined then transfer to a bowl and mix in your chocolate chips.
- Enjoy!
- This can be stored in the fridge for up to one week- it's unlikely they'll last that long though 😉
