Feta Spaghetti Squash
Ingredients
- 1 spaghetti squash
- 1 block of vegan feta 8 oz (can use non vegan if not vegan)
- 4 garlic cloves
- 1 carton of tomatoes
- ⅔ cup chickpeas
- salt & pepper to taste
- 2 tablespoon olive oil
Instructions
- Preheat oven to 400F!
- Cut your spaghetti squash in ½ then deseed. Split your feta in ½ then put it inside of each ½ of the spaghetti squash. Drizzle with olive oil then add your garlic, salt, pepper, feta, chickpeas, and tomatoes. Finish with a bit more olive oil
- Put in the oven for ~1 hour until tender then mix it all together and enjoy!
