In this recipe, I've decided to put a healthy twist on the traditional by opting for brown rice over the customary white sticky rice. Brown rice retains its bran and germ layer, offering more fiber, vitamins, and minerals. It makes this beloved dessert not only indulgent but also a tad more nutritious. It also is an ode to my first experience with wild rice as the base.
But fear not, the essence of the classic Mango Sticky Rice remains untouched. The brown rice still achieves that delightful sticky and creamy texture, perfectly complementing the luscious slices of mango. Mango Sticky Rice
Ingredients
- 1½ cups glutinous sweet brown rice
- 1 cup unsweetened coconut milk
- ⅓ cup sugar
- ¼ teaspoon salt
- 2 large mangoes
Instructions
- Wash your brown rice a few times then soak overnight in cold water on the counter.
- Steam your rice (I put water in a pan with a steamer inside and closed the pan with a dishcloth between the lid and rice. 30-40 minutes, until tender
- While the rice is cooking, boil the coconut milk, sugar, and salt in a pan
- Once the rice is finished, pour the rice in the pan with the coconut mixture. Allow it to sit for 30 minutes (up to 2 hours)
- Slice your mangoes and plate with ¼ cup of rice on a plate
- Enjoy!
