Ginger Vinaigrette Hearty Vegan Salad
Ingredients
- 1 head of Romaine or other lettuce of choice
- 1 pink lady apple
- ½ cup shredded carrots
- 1 sweet potato roasted
- 1 15 oz can of chickpeas crisped in the air fryer
- 1 red pepper
- ½ cup pecans
- 1 avocado
- ⅓ cup hemp seeds
Ginger Vinaigrette
- 6 tablespoon olive oil
- 2 tablespoon apple cider vinegar
- 1 teaspoon mustard
- ½ teaspoon ground ginger
- salt to taste
Instructions
- Chop all of your fruits and vegetables
- Cook your sweet potato chunks in the air fryer 15 min 400F and your chickpeas for 15 min 400F in the air fryer
- Combine all of your dressing ingredients then pour on top of your salad fixings and enjoy!!
