This is my go to breakfast!!! I love these gluten-free pancakes (and I really think you will too)!
I totally get that people are busy and don't have time to make a gorgeous stack of pancakes every morning. BUT, if you do (or if it's the weekend) you should absolutely make these! They are SO fluffy, take only 10 minutes to whip up, and require only a few pantry staples to make. The recipe is a single serving recipe. Feel free to double and make for your roommate, spouse, friend, or for yourself tomorrow (your future self thanks you).
Picture this: a stack of warm pancakes, so smooth and naturally sweet, they're like a hug for your taste buds. Feel free to jazz them up with bursts of juicy wild blueberries or decadent chocolate chips. Once they're cooked to golden perfection, top them with your favorites – a cascade of fresh fruit, a generous sprinkle of granola, and a drizzle of syrup.
I love using wild blueberries inside to add more fruit to my morning and because they contain more antioxidants. They're also typically smaller which makes them more adorable for pancakes (plus you can pack more in, or save room for chocolate chips).
I know, I know, some people are not interested in having gluten-free and/or vegan food, but trust me, you are not sacrificing flavor or texture with these. Not to mention, the oats used as the flour make this breakfast filled with complex carbohydrates, keeping you full longer. These pancakes only use 6 ingredients and only take 10 minutes to make! They're a must try!!
Gluten-Free Vegan Pancakes
Equipment
- 1 Skillet / Pan
Ingredients
- ½ cup Oat Floar
- 1 Banana
- 1 teaspoon Baking Powder
- 1 ½ teaspoon Apple Cider Vinegar
- 1 teaspoon Vanilla
- 1 teaspoon Cinnamon
- Blueberries Optional, but delicious!
- Fresh Fruit, Nuts/Granola, Maple Syrup For toppings
Instructions
- Mash the banana and combine all ingredients (besides toppings) in a bowl.
- Heat up a skillet/pan with some avocado oil. While you're heating up the pan, let the mixture sit for 2-3 minutes.
- Once the pan is warm, form pancakes, add in blueberries or chocolate chips. Flip after 3-4 minutes.
- Once done, top with toppings of your choice! Enjoy 🙂
